Avocado is the new “in” food these days. The last one was quinoa, and after the industry is well fed with the health benefits of this wonder grain, now we have this wonder fruit in line. And there is this wonder spice “turmeric” which is soon turning into a rave.
Having said that, I know and understand that there are many health benefits of avocado and that’s the reason I am trying to get more of it in my diet. Having had Indian food most of my life, this fruit is still new for my taste buds and its taking me a bit of time to get adapted to its taste and texture.
Last time I tried to mix it into my smoothies like this Vegan avocado mango almond smoothie, and it blended amazingly with the flavours. Next weekend I have thought of giving a go to Banana avocado smoothie and see how it tastes.
Anyway, so after the successful combination of Mango avocado smoothie, I took another little step and prepared this Mango avocado salad a few days ago. So I started with the avocado and mango and some lettuce. For the crunch I added some pomegranate and chopped pistachios.
The chilled, sweet mango bites went so well with the smooth, ripen avocado. The lettuce was fresh and crunchy which bosoted the freshness. I did not need any dressing to do with this salad but I did squeeze some lemon juice on top at the end with a dash of black pepper. Just mixing and turning different things you know.
This is a super refreshing vegan salad and goes pretty well with a Pasta based or rice based dinner as a side. Its quite nice to have on its own too. And ready in like 5 minutes so you can assemble it quickly if any guests arrive.
What you need?
- 1 medium sized Mango, diced
- 1 medium sized avocado, chopped small
- 2 tbsp of pomegranate seeds
- 1 tbsp of pistachios, chopped or pounded
- 2-3 leaves of lettuce
Throw everything together and garnish with lemon juice and black pepper if needed.
