Ok, this one came out really easy and quick option for a Sunday afternoon. Warm and lazy, we were resting and enjoying some old flicks on Star gold.. which is offcourse a favorite pass time for S. He lloouuuvvveessss Old hindi movies. So, we were watching some old flick and I was getting soo bored. Its amusing how my heart pangs for kitchen when am bored. I went into the kitchen and looked for something to make, rather bake. Didnt have any idea what am I going to do, I vaguely prepared the stuff for muffins. I had never baked em before, and I surprised myself with the results. Its was soo damn easy. Why did I never try it before???… Looking for more such afternoons now after that … S more than me 🙂
These muffins are so easy and quick to make. Loved the texture and color. With the addition of Oats, they have got some guilt free factor of their own. Since I only had strawberries in store, but any berry can be used for these. Dried or fresh, berries will do their work.. to lure you 🙂
Ingredients:
1. 2 cups All purpose flour
2. 1/2 tsp salt
3. 2 ½ tsp baking powder
4. 1/3 cup sugar
5. 1 egg
6. ¾ cup milk
7. ¼ cup melted butter
8. 2 teaspoons vanilla extract
9. 1 cup berries, chopped small.
10. 1/2 cup rolled Oats, ground to powder.

Method:
1. Combine dry ingredients in a bowl. Combine wet ingredients in a separate bowl.
2. Mix the two together gently.
4. Spoon batter into 12 greased muffin cups. Bake 12-20 minutes on 220 c, or until a tester comes out clean (baking time will be dependent on the size of your muffin cups and Oven type. Keep checking )
Notes:
1. Keep your muffin cups greasy enough, mine were not so they were sticking at places.
