
No! Its not been my birthday party which has made me open up. But there has been a lot of birthdays lately and they do make me a bit emotional. No complaints though. It’s a lot of cake that’s going inside me right now. Who knows, I might whine next week about breaking the weighing scale again!

Coming to the recipe for today- Instant malai peda or doodh peda (doodh=milk) as it is called is a super easy sweet that you can make (almost) instantly if you are craving for some quick sugar rush or in case of unannounced guests.
You don’t even have to use your gas for that and its all done in Microwave so that saves you a lot of hassle and cleaning work. It is of course not as amazing as Mathura ke pede but they are made using khoya and takes at least a hundred times more effort and time. So this is kind of a shortcut to that.
To be honest, there is not much of a recipe here. But just jotting up the ingredients and whipping them for a few minutes. And you can add any flavours of your choice like vanilla, cardamom, mango, rose essence etc. to the dough (or batter!) for a quick spin.
There is just one downside. Its very very addictive! Its almost impossible to just stop at one. I would ask you to try, but then I don’t want to take the blame of you gulping down extra calories with these.
So just prepare them in small sizes (like I do) so you could cheat yourselves a bit and pop in small portions every time you want to have some.

Instant malai peda or milk peda in Microwave
Ingredients
- 1 Can sweetened Condensed Milk I used Nestle Light
- 1 tbsp milk to soak saffron in
- 1 ¼ cup Milk Powder
- ¼ cup Ghee or coconut oil
- 1 tbsp chopped Pistachios or almonds or cashews or all of them together
- 1 tsp Cardamom powder
- tsp Few strings of Saffron- just about ½
Instructions

Soak saffron in 1 tbsp of milk and keep aside.

Melt Ghee in a microwave friendly large mixing Bowl by microwaving for about a minute or more. Stir in the condensed milk and milk powder together and give a nice whisk to mix everything together.

Microwave this mix for about 2 minutes at full power, take out, mix and repeat twice again. Then add saffron+milk, cardamom powder and Pistachios, give a nice stir.

Microwave again on full power for 2 minutes and take out. It should have converted into a gooey lump by now. Allow this lump to cool down for a few minutes.

While its still warm, but touchable- apply ghee on your palms and pinch small portions of dough from this lump. Roll onto your palms to make the balls or flatten them. sprinkle some more chopped nuts (almonds,pistachios, cashews etc.) on top and press them very gently to let them sink in.

Enjoy these little beauties warm or at room temperature.
Recipe Notes
These can be kept at room temperature for a day and for 2-3 days in refrigerator.
Do not increase the quantity of Milk powder any more than this, or else you might find some cracks in the final Pedas after cooling because of the dryness.
You may add a few drops of milk or water if you find the final mixture too dry to roll.

PS – poppy seeds is one ingredient I honestly do not use as much. Could you give some tips on how to use it effectively? I am never able to make a smooth paste.
