Spinach (palak/paalak) is a treasure house of essential vitamins and minerals. So it must be included in the week’s menu a few times at least. The usage can be varied:
Chopped spinach leaves can be cooked with potatoes as a semi-dry side dish or sabzi like this Palak aloo.
A few spinach leaves mixed with vegetables and lentils like a warming soup is lovely on a cold winter night like this Palak chana dal here.
We can even make Punjabi style Palak paneer pudina which is really healthy or creamy Palak paneer malai.

Today I am sharing a recipe which is little different, easy & very interesting. Spinach corn cheese sandwich (healthy spinach leaves cooked in yummy cheesy white gravy with some herbs) ???
It is simple recipe which would be loved by all especially kids.

This sandwich can be served with any chutney of your choice like Mint amla chutney, Coriander chutney etc. It makes a great breakfast or tea time snack.

Healthy spinach and corn sandwich
Ingredients
Ingredients for Stuffing:-
- 1 tsp Butter
- 1 tbsp of Ginger + garlic + chilli paste
- ½ cup of Spinach leaves
- ½ cup corn
- ½ tsp salt or to taste
- ½ tsp black pepper powder
Ingredients for white sauce:-
- About1 glass of milk
- 1 tbsp All Purpose Flour
- 2 Cheese Cubes
- ½ tsp Salt
- 1 tsp Oregano – optional
- 1 tsp Pizza Masala
Ingredients for Sandwich:-
- 1 Packet of bread
- Some Butter as per preference
Instructions
Prepare the stuffing:

Heat butter in a pan. Add ginger, garlic, chili paste and sauté for a about a minute. Then add spinach leaves and corn cook for about 5-6 minutes.

Add salt & black pepper powder & mix well. Cook for another minute and keep aside.

Prepare the sauce:
-
Now in another pan, heat about a tbsp. of butter.

In a mixing bowl, make a paste of all-purpose flour and milk & whisk properly to mix it. There should not be any lumps there.

Now add this paste of flour + milk into the pan and continuously stir to mix it properly. Keep the gas at low.

Now add the cheese cubes, oregano & pizza masala & make a very thick sauce. Keep stirring to avoid sticking at the bottom.

Once thick enough, turn off the flame.

Now mix this sauce with the spinach corn stuffing we prepared. Cool it & refrigerate for some time, about 1 hour. Your Spinach Corn Cheese stuffing is ready

Assemble the sandwich:

Take a slice of bread and apply butter on it. Then spread the stuffing evenly with a spoon and cover it with another bread.

Toast this sandwich on a buttered pan or a grill/toaster.

Serve this sandwich with tomato ketchup or chutney of your choice.
Recipe Notes
You could also add onion into the stuffing if you want.
